I connect molecular interactions with ingredient stability and performance. My expertise combines natural-colour stability, liquid and powder formulation, colloids and interfaces, encapsulation, and biomass valorisation.

Food colloids & interfaces

I study how proteins and polysaccharides assemble at oil–water interfaces, especially in sodium caseinate–pectin systems and multilayer emulsions.

My work links pH, biopolymer ratio, carrier oil, and molecular binding with interfacial structure and emulsion stability.

Encapsulation & bioactive delivery

I develop nano- and microencapsulation systems for essential oils, natural antimicrobials, curcumin, and other bioactive compounds.

I investigate how the carrier and interfacial structure affect stability, antimicrobial activity, and in-vitro bioaccessibility.

Natural colours: stability & formulation

I develop natural-colour formulations for foods and beverages, working with anthocyanins, β-carotene and phycocyanin. My focus is understanding and improving colour stability under changes in pH, heat, light, oxygen and processing.

My expertise covers both liquid and powder formulations. I connect ingredient interactions, colloidal behaviour and analytical measurements with practical choices for formulation, drying and application.

Biomass valorisation & high-value ingredients

I recover and transform biomass and processing by-products into high-value ingredients. My experience includes extracting, purifying and characterising marine collagen and gelatin, and developing functional biopolymer materials from aquatic by-products.

I connect extraction and processing conditions with ingredient structure, functionality, yield and purity to support the development of useful products from underused resources.

Natural antimicrobials encapsulated by complex coacervation: understanding of molecular mechanisms

Antimicrobiens naturels encapsulés par coacervation complexe : compréhension des mécanismes moléculaires

My doctoral research investigated how biopolymer interactions and interfacial assembly control the stability and antibacterial performance of nanoemulsions containing natural antimicrobials.

I studied droplet size and carrier oil, caseinate–pectin complexes, protein–antimicrobial interactions, and the formation of multilayer emulsions. The work combined interfacial rheology, fluorescence quenching, isothermal titration calorimetry, and dynamic light scattering.
