Natural antimicrobials encapsulated by complex coacervation: understanding of molecular mechanisms

My doctoral research investigated how biopolymer interactions and interfacial assembly control the stability and antibacterial performance of nanoemulsions containing natural antimicrobials.
I studied droplet size and carrier oil, caseinate–pectin complexes, protein–antimicrobial interactions, and the formation of multilayer emulsions. The work combined interfacial rheology, fluorescence quenching, isothermal titration calorimetry, and dynamic light scattering.
